The first question concerns the steel with whom the forged knives are manufactured. The second is about materials used for the handles.

K SABATIER does not manufacture Knives Ranges of various qualities. Only steel, handle and design can differentiate the K SABATIER Forged Knives.

1°- WHICH STEEL DO YOU WISH ?

We are working two different steels.

We use CARBON STEEL, which was used by the Manufacturers in the past, because of its cutting power, facility to re-sharp the knives. But it hates water and change of colors with time.

STAINLESS STEEL is used for the majority of the ranges. It's a specific steel for the manufacturing of High Quality Forged Knives.

We manufacture several Stainless Steel Forged Ranges (Authentique - Bellevue - Proxus - Auvergne - Elegance). The differences between these ranges only concern the Design and the Handle.

Quality is the same.
