The roots of AGENAIS lie in the south of traditional France and date back several hundred years. The shape of the handle and the blade of the salami leaf are signs of this old type of knife, probably from the Middle Ages and whose family also includes the SAINT-AMANT and the BONNET AGENAIS takes its name from the city of Agen, halfway between Bordeaux and Toulouse. Its handles are adorned with striking brass rosettes, which are not just ornaments, but such knives are tighter in the hand at work (see also BASQUE-YATAGAN). The typical materials used for the manufacture of the sleeves are the horn, the ram horn and the southern hardwood such as boxwood, olive trees, oaks, cork, etc. A peculiarity of the region around Agen are the famous plum trees. Once brought by the Crusaders of the East, they produce particularly aromatic fruits here in the region, which are among the designated specialties of France. Therefore, the hard and dense plum wood, with its characteristic red-brown color gives us the raw material for a small series of exclusive AGENAIS.
