Congratulations, you have just purchased a professional knife Vintage Au Carbone. Its exceptional cutting power and its re-sharpening are superior to a Stainless Steel Knife. However we wish to draw your attention to the maintenance of a knife made with Carbon Steel :
- After using, wash your carbon steel Sabatier knife in warm soapy water and immediately wipe dry.
- Never put a Carbon Knife in the dishwasher.
- With time, the steel can change colour. This is quite normal. This is a perfectly natural occurrence without risk.
- To protect the blade from the water and to avoid the rust, we grease our Carbon Knives.
- A regular sharpening maintenance is necessary to have a perfect cutting edge.
